| COLOMBIA SUPREMO HUILA
The Huila Supremo coffee is produced by the laborious descendants of the
Yalcones and is characterised by excellent quality and the green-emerald colour of
the bean. The altitude at which the crops of this excellent coffee type are
cultivated is ideal to produce its exceptional aroma and taste.
The Huila growing area lies east of the Andes Mountains. The region is particularly
admired for producing fine coffees which can have some vivid complexities to
accompany the basic cup profile. Of all Colombian specialty coffee Supremo is the
highest grade based on the fewest physical imperfections in the bean.
Producers in Huila focus on sustainable and environmentally friendly practices,
including conservation of local biodiversity and social and economic development.
| PAPUA NEW GUINEA
The term PSC (Premium Smallholder Coffee) denotes coffee that has been sourced
from a number of independent smallholder farms, as opposed to a large plantation
or estate. More than 90 percent of all of Papua New Guinea's coffee is grown on
smallholder farms. PSC coffee is typically handpicked and then depulped with
either a small machine or by hand. It is then fermented and washed, before being
laid out in the sun to dry.
Chimbu, also known as Simbu, is a province in Papua New Guinea (PNG) known for
its high-quality, organically grown Arabica coffee. The coffee from this region is
typically grown by smallholder farmers organized into cooperatives and is known
for its smooth, full-bodied flavor with notes of caramel, honey, and fruit.
| BRAZIL OURO FINO
This coffee is a curated selection of producers located in the region of Ouro Fino,
Brazil. The region is characterised by its mountainous terrain and tropical climate.
These producers benefit from the area’s cool temperatures and plentiful rainfall to
produce a consistent cup of coffee that roasters have come to rely on over the
years.
The mill in the city plays a pivotal role in the quality of the coffee it processes. The
agronomist at the mill in Ouro Fino works with farmers from planting through to
harvest and production, ensuring a consistent result. This leads to increased
profitability for farmers from this lot, who demand and receive a higher premium for
their coffees. This coffee is a blend of Mundo Novo and Catuai, two hardy varieties
that do well in the high altitudes of Ouro Fino.
