| NICARAGUA RAC
The higher altitudes and lower temperatures produce a slower maturing fruit and a
harder, denser bean with concentrated flavour profiles, and are as a result quite
sought-after. Nicaragua has long been known as an excellent coffee growing
region. It has a variety of coffee growing regions, most of which are quite high in
elevation, producing an excellent cup. The beans are typically quite versatile, and
a little less acidic than most other Central American coffees.
Rainforest Alliance (RFA) is a certification that emphasizes climate-smart
agriculture. RFA farms have at least 40% of land covered by canopy, significant
species diversity, and a system of natural vegetation buffers between agricultural
land and bodies of water. The farms also use organic fertilizers. (Rainforest

The Eastern Highlands Province is a mighty and rugged terrain with peaks of the
Kratke and Bismarck Ranges soaring to 3700 masl, abundant river systems Asaro and
Lamari flowing into the Purari, and lush tropical rainforest valleys rolling
throughout. Home to a phenomenal number of fauna and flora, plant species here
are especially diverse. This rich ecosystem and fertile climate provide the
incredible potential for high-quality coffee.
| MEXICO RAC
Chiapas, located in eastern Mexico near the border of Guatemala is home to the
city of Yajalon where this well-known coffee is derived. The climate here is tropical
with high humidity and rainfall, often enveloping the upper mountains in cloud and
fog. In 2020, the coffee farm adopted Rainforest Alliance certification. Since then,
they have been at the forefront of climate-smart agriculture and social advocacy,
overcoming obstacles such as poor infrastructure and limited access to healthcare.
The initiatives have contributed to ecological restoration and fostered a cultural
movement toward sustainability. Through targeted training programs, they have
